• Red Sauce Recipes - Chicken Drumsticks Poached in Porcini Red Sauce w/ Roasted Vegetables

    You may felt it - there wasn't quite frost on the ground this morning, but Fall is definitely on it's way.  Here's something hearty and healthy to keep you satisfied whether there's a chill in the air or not, with the help of Porcini Red Sauce's rich, earthy aroma.

    Chicken Drumsticks, poached in Porcini Red Sauce, over a medly of vegetables

    15 fingerling potatoes
    10 cherry tomatoes
    2 tbsp extra-virgin olive oil
    1 tsp sea salt
    1 tsp freshly ground pepper
    1 jar Porcini Mushroom Red Sauce
    2 chicken drumsticks
    1 tsp sea salt
    1 tsp freshly ground pepper
    2 tbsp extra-virgin olive oil
    1) Heat oven to 325°. Half the fingerling potatoes and keep the tomatoes whole, season with salt and pepper. Transfer onto a baking sheet and cover with olive oil. Allow the vegetables to bake until potatoes are golden and the tomatoes begin to wrinkle, not worrying about if they have been cooked through.

    2) Season drumsticks with salt and pepper. In a hot stainless steel pan, quickly sear both sides of the drumsticks, about 2 minutes per side. The drumsticks should still be raw on the inside but golden brown on the outside. 

    3) Transfer the vegetables and the chicken into a pot (preferably dutch oven), add one whole jar of Atlantic Ave. Porcini Mushroom Red Sauce. Let simmer over low heat for about 1 hour. Chicken should be tender and fall off the bone, vegetables should be cooked through. 

    Pair with a robust red wine maybe a good Cabernet Sauvignon, and enjoy!
